- Refined sweetness: The flavor is more complex and sweet than standard green-leaf Swiss chards, with earthy undertones. The glossy, savoyed (crinkled) leaves add a delicate, refined texture.
- High-end presentation: When cooked, the vibrant red color holds up well, ensuring the final plate is as beautiful as it is delicious.
- Versatile sizing: Ideal for chefs interested in both baby leaf production and full-grown bunching. For baby leaf, it grows faster than other colored varieties, offering a delicate texture with excellent loft.
- Baby leaf salads: Harvested early, the tender baby leaves can be served raw to add a vibrant splash of color and a refined flavor to fresh salads.
- Sautéing and wilting: The leaves and stems can be sautéed with garlic and olive oil for a simple yet elegant side dish. The leaves will wilt beautifully while the stalks retain a delicate crunch.
- Elegant fillings and wraps: Use the full-size leaves to wrap and steam delicate ingredients like fish or ricotta for a refined and beautiful presentation.
- Garnishes and platings: The striking deep red stalks can be used as a high-impact garnish, adding a beautiful contrast to any plate.
Start indoors 8–10 weeks before last frost. Germinate at 26–30 °C on a heat mat; peppers stall below 22 °C. Pot up to 10–15 cm before hardening off outside after nights stay above 12 °C.
Feed balanced through bloom, then bump potassium for fruiting. Stake taller varieties. More detail in our full Canadian growing guide.
Match the pepper to the technique: thin-walled varieties blister fast in a hot pan; thick-walled ones roast or stuff beautifully; fruit-forward ones make balanced sauces and pickles. The variety's flavour profile is your shortcut — see Choosing the right pepper for a use-case guide.
