The Aji Margaritino Yellow Pepper (Capsicum chinense) is a variety prized for its intense, fruity, habanero-like flavor, but with significantly less heat. It is part of a group of new, well-regarded varieties from the Caribbean
- Flavor: A bold, fruity flavor reminiscent of a habanero, balanced by a gentle sweetness. The wild, fruity taste makes it a favorite for those seeking intense flavor without overwhelming heat.
- Heat: Very mild, typically ranging from 500 to 2,000 Scoville Heat Units (SHU). This low heat allows the complex flavor to shine.
- Origin: The Caribbean. It is one of three related varieties, with others ripening orange and red.
- Appearance: Small, yellow pods with thin walls, growing up to 2 inches in length. The plants are productive and can be grown in containers.
-
Culinary Uses:
- Hot Sauces: The wild, fruity flavor makes for exceptional hot sauces.
- Powder: The low heat allows the fruity notes to shine when dried and ground into powder.
- Fresh: A delicious addition to salads and other fresh dishes.
- Frying/Grilling: Suitable for cooking applications.
- Stuffing: The small size and flavorful flesh are suitable for stuffing.
Start indoors 8–10 weeks before last frost. Germinate at 26–30 °C on a heat mat; peppers stall below 22 °C. Pot up to 10–15 cm before hardening off outside after nights stay above 12 °C.
Feed balanced through bloom, then bump potassium for fruiting. Stake taller varieties. More detail in our full Canadian growing guide.
Match the pepper to the technique: thin-walled varieties blister fast in a hot pan; thick-walled ones roast or stuff beautifully; fruit-forward ones make balanced sauces and pickles. The variety's flavour profile is your shortcut — see Choosing the right pepper for a use-case guide.
