The Culinary Edge 🟣
The Purplette is the definitive "chef’s onion." Designed to be harvested when small, this unique variety transitions from a vibrant bunching onion into a glossy, deep-purple pearl onion about the size of a walnut. For the professional kitchen, its value lies in its size and color: the rich amethyst skin is incredibly thin, and unlike many red onions, the purple pigment often penetrates a few layers deep. Whether served whole, glazed, or pickled, Purplette provides a sophisticated, high-contrast element that standard boiler onions simply cannot match.

✨ Flavor Profile
-
Delicate Sweetness: Far milder than a full-sized red onion, Purplette lacks the aggressive "sulfur" burn, making it perfect for raw or lightly cooked preparations.
-
Tender Texture: The layers are crisp and succulent, designed to be eaten whole without the tough, fibrous outer layers found in storage onions.
🍴 Culinary Versatility
-
The "Whole-Glazed" Side: Its small size makes it the perfect candidate for being braised whole in butter or balsamic vinegar, creating a stunning, jewel-toned side dish for meats and roasts.
-
Quick-Pickled Pearls: These are the ultimate pickling onions. Their size and vibrant color make them a showstopper in a jar or as a bright, acidic garnish for charcuterie boards.
-
Colorful Scallion Alternative: Harvested early, they function as "purple spring onions," adding a pop of color to salads, tacos, or as a garnish for chilled soups.
🌱 Growing Notes
-
Fast-Track Harvest: One of the quickest onions in the garden. In the Montreal region, they can be succession-planted to ensure a steady supply of "pearls" from early summer through fall.
-
No Bulbing Required: Unlike long-day storage onions, Purplette doesn't rely on specific daylight hours to "bulb up," meaning you can plant them whenever the soil is workable.
-
Intensive Spacing: Because they are harvested small, you can plant them much closer together than traditional onions, making them a high-yield choice for small plots or raised beds.
Start indoors 8–10 weeks before last frost. Germinate at 26–30 °C on a heat mat; peppers stall below 22 °C. Pot up to 10–15 cm before hardening off outside after nights stay above 12 °C.
Feed balanced through bloom, then bump potassium for fruiting. Stake taller varieties. More detail in our full Canadian growing guide.
Match the pepper to the technique: thin-walled varieties blister fast in a hot pan; thick-walled ones roast or stuff beautifully; fruit-forward ones make balanced sauces and pickles. The variety's flavour profile is your shortcut — see Choosing the right pepper for a use-case guide.
