The Mattapeno F3 Mutant is an artisanal cross of the Capsicum annuum species, known for its extreme genetic unpredictability. As an F3 pepper, it is genetically unstable, meaning that the seeds produce plants with wide variations in pod appearance, heat level, and flavor, with every harvest being a surprise.
- Flavor: Often described as having a fruity flavor characteristic of the C. chinense species, sometimes with earthy and subtly sweet undertones. However, the exact flavor is highly variable and depends on the individual plant's genetic expression.
- Heat: The heat level is unpredictable, with reports of anything from mild heat to high spice. The original Mattapeno parent pepper is believed to be in the 5,000 to 10,000 SHU range, but the mutant offspring can express a wider range of heat.
- Origin: The parent Mattapeno is a variegated jalapeno discovered by a chili grower named Matt Ohlendorf in Alaska, USA. The F3 Mutant is a result of further selective breeding and crossing to increase genetic diversity.
- Appearance: This is the pepper's most defining feature. Pods can come in various shapes and sizes, and colors can range from green with white streaks (like the original Mattapeno) to vibrant yellows, oranges, and reds. The unpredictability of its appearance is part of its appeal to pepper collectors.

Start indoors 8–10 weeks before last frost. Germinate at 26–30 °C on a heat mat; peppers stall below 22 °C. Pot up to 10–15 cm before hardening off outside after nights stay above 12 °C.
