Cutting Celery Seeds
Cutting Celery is the chef’s celery: a generous plant grown for intensely aromatic leaves and slender, tender stems rather than a thick root. It gives stocks, sauces, salads, and finishing dishes the clean savoury lift of celery with far more usable leaf.
The Culinary Edge
Use the leaves like a bold parsley-celery hybrid. Fold them into potato salad, tuna salad, egg salad, salsa verde, herb butter, and green sauces. The fine leaves are excellent with lemon, mustard, capers, apple, cucumber, white beans, tomatoes, fish, and roast chicken. Add a handful to soups and braises just before serving for a fresh top note, or simmer stems and leaves into stock.
Growing Notes
- Start early indoors; celery is slow to germinate and appreciates a long season.
- Transplant into rich, moisture-retentive soil after hardening off.
- Harvest outer leaves and stems repeatedly so the plant keeps producing.
- Keep plants evenly watered for the most tender, aromatic growth.
Harvest & Storage
Cut sprigs in the morning and refrigerate them wrapped in a damp towel. For longer storage, blend leaves with oil and freeze in small portions for soups, sauces, and finishing.

Start indoors 8–10 weeks before last frost. Germinate at 26–30 °C on a heat mat; peppers stall below 22 °C. Pot up to 10–15 cm before hardening off outside after nights stay above 12 °C.
