The Aji Fantasy Peach pepper (Capsicum baccatum) is a uniquely flavored and attractive chili bred in Finland, valued for its sweetness, fruity flavor, and mild to moderate heat. It is a variant of the original Aji Fantasy pepper and is known for being an easy and prolific grower.
- Flavor: Exceptionally sweet and fruity with a hint of apple, sometimes with subtle tangy or melon-like notes. The thick, crunchy walls and juicy flesh make it particularly enjoyable. The mild heat is concentrated in the seeds and placenta, leaving the rest of the flesh sweet.
- Heat: Mild to mid-range, typically between 5,000 and 30,000 Scoville Heat Units (SHU). It provides a deep, satisfying burn without being overwhelming.
- Origin: Developed over several years in Finland by Jukka Fatalii. It is a variant of the Aji Fantasy, which was specifically bred for high yield and flavor.
- Appearance: Small, lantern-shaped pods that mature from a creamy white to a beautiful peachy orange color. The plants are often very prolific.

Culinary Uses:
- Salsas and Marinades: Its fruity and sweet flavor is excellent for fresh salsas, especially with other fruits, and for marinades for seafood or poultry.
- Snacking: The thick, crunchy flesh and sweet flavor make it a great snack when eaten raw, either fresh from the garden or pickled.
- Hot Sauces and Powders: Can be used to create delicious, sweet, and moderately spicy sauces or dried and ground into a high-quality chili powder.
- Stir-fries and Salads: Adds a unique fruity element and a hint of heat to stir-fries, salads, and vegetable dishes.
Start indoors 8–10 weeks before last frost. Germinate at 26–30 °C on a heat mat; peppers stall below 22 °C. Pot up to 10–15 cm before hardening off outside after nights stay above 12 °C.
