Aji Cachucha is a seasoning pepper: aromatic, mild and useful anywhere you want pepper depth without heat.
Ingredients
- 8 Aji Cachucha peppers, seeded
- 1 onion, chopped
- 4 garlic cloves
- 1 bunch cilantro or culantro
- 2 tbsp olive oil
- Salt to taste
Method
- Pulse peppers, onion, garlic and herbs in a food processor until finely chopped.
- Warm olive oil in a pan and cook the mixture gently for 8 to 10 minutes.
- Season with salt and cool completely.
- Refrigerate for a few days or freeze in small portions.
- Use as a starter for beans, rice, soups, stews and braises.
