Aji Cachucha Sofrito Base

Aji Cachucha is a seasoning pepper: aromatic, mild and useful anywhere you want pepper depth without heat.

Ingredients

  • 8 Aji Cachucha peppers, seeded
  • 1 onion, chopped
  • 4 garlic cloves
  • 1 bunch cilantro or culantro
  • 2 tbsp olive oil
  • Salt to taste

Method

  1. Pulse peppers, onion, garlic and herbs in a food processor until finely chopped.
  2. Warm olive oil in a pan and cook the mixture gently for 8 to 10 minutes.
  3. Season with salt and cool completely.
  4. Refrigerate for a few days or freeze in small portions.
  5. Use as a starter for beans, rice, soups, stews and braises.
